Borch er utdannet sosiolog ved Universitetet i Oslo og jobber i dag som forsker 1 ved Forbruksforskningsinstituttet SIFO. Hun leder NFR-prosjektet «Practices and Policies of Belonging among Minority and Majority Children of Low-Income Families» (BELONG, 2021-2025) og arbeider med en lærebok om kunnskapsoppsummeringer for samfunnsvitere som vil publiseres på Cappelen Damm Akademiske sommeren 2024. Borch tok sin doktorgrad ved Universitet i Helsinki på tema pengespill og spilleproblemer i hjemmet. Ut over dette har hun blant annet forsket på ansvarlig forskning (RRI), kjøpestopp, fedme, matsikkerhet, energiforbruk i hjemmet, julegavegiving, økonomisk likestilling, digitale medier, unges forbrukerkunnskap og forhold til lootboxes i dataspill og TV-reklame.
